Ingredients 2 teaspoons active dry yeast

4 ½ teaspoons sugar

1 ¼ cups very warm water

3 ½ cups flour (plus 1/4-1/2 cup reserved for kneading)

1 ½ teaspoons salt

Combine, knead and placed in a greased bowl. Cover with plastic wrap. Allow to rise. Punch down and rest 10m. You should be able to make 8 decent sized bagels. Let them rest. Preheat to 425. Boil for two minutes, flip and boil for one. Brush with egg wash, add toppings at this point. Bake for at least 20m.
